Chef Francis, who is Filipino-Chinese, has spent more than a decade working in fine dining restaurants in San Francisco before establishing Pinoy Heritage, a successful pop-up that won Eater SF’s “Pop-up of the Year” award. This pop-up was the precursor to opening Abacá in late 2021. In his cuisine, Chef Francis honors old family recipes and flavors while using some of Northern California’s best seasonal ingredients.
Abacá has been the recipient of many awards including the 2022 James Beard Semi Finalist Best New Restaurant and New York Times 50 Best Restaurants in America selection. It was featured on various TV shows, like Padma Lakshmi's Taste the Nation and KQED Check Please! It is also listed in the Michelin Guide: “...the vibrant cuisine uses traditional flavors and techniques as a jumping-off point for creative, colorful dishes. Pork features heavily, as in juicy skewers of longganisa with cane vinegar and puffed rice, but a bounty of NorCal produce gets its due as well.”
